Thai Kitchen Coconut Milk
Coconut milk, coconut water, coconut rum, shredded coconut, and coconut oil seem to be so popular these days. Coconut milk is a cream that is pressed out of the meat of the coconut. This coconut milk is gluten free. Coconut is included in many Thai foods, such as curries.

This milk has the “good” fat, Omega 3’s. I read an article about the Thai diet, and how they have a low cancer rate. Read the entire article on : www.islandfoofie.com, search” coconut milk in my curry”. It does have 60% saturated fat in 1 serving, (1/3 cup).
I have used coconut milk to thicken sauces or substitute it for recipes that call for cow’s milk. You can dilute it with chicken or vegetable broth for your sauces.
What I do not like about this brand: The above article said that an ingredient, ’guar gum’ found in this milk is used as a thickener. (Not a good thing) So check your labels. Whole Foods may have a more natural coconut milk, if you desire.
