I love it when I overhear a good conversation. In this case, I was in a waiting room when I overheard the receptionist talking about her dating drama. She was a cute girl that looked to be in her mid-twenties. She was talking to an older lady who had referenced recently seeing the girl’s mother. Andrew and I were going to take a relatively quick 5 1/2 hour road trip to the Capital District so we could get India from college for the summer.

1 small eggplant, sliced
2 tbsp olive oil
1/2 tsp sea salt
2 tbsp olive oil
