For the most part I have stayed Gluten Free since my fast in January. I've tried a few GF products and have compiled a list of my favorites (and two to stay away from!).

On my own personal journey of eating healthier, I discovered that I was spending a LOT more time in the kitchen than the days gone by of mac & cheese, chicken nuggets, hot dogs and Gold Fish. Cutting and peeling an apple doesn't seem like a very time consuming process, but when every meal and snack is prepared from whole, clean, healthy foods, you up your time in the kitchen by at least double. My family and I just returned from vacation with my in-laws and my brother-in-law’s family. My father-in-law told me that my pancakes were going to make him fat! When I was a child, one of my favorite foods was pasta. For almost two years straight, I ate pasta with butter and/or mac-and-cheese for two…and sometimes even three meals a day! Yesterday, I was shopping at a local market and came across some hand-packaged baby bok choy.
