Yesterday, I was shopping at a local market and came across some hand-packaged baby bok choy. There were 5 perfect heads of bok choy in each bag, and they were charging less than $2.00 for all of them! I love a good deal even more than I love baby bok choy, so I quickly grabbed some, tossed it into my reusable shopping bag, and headed home to make a simple, delicious dinner.…

So its supper time again, and I don't have anything really planned and have so much unmatched items in my kitchen. I am sure all of you have had this happen to you from time to time, just not sure what to make, but there are too many staples hanging around calling your name. The dilemma is probably as old as motherhood itself. How DO you get your kids to eat their vegetables? When I was a kid, I remember hating a LOT of things my mom put on my plate: beets, apple sauce, mustard, spinach, radishes (still not a fan – sorry Mom) and a bunch of other things. Up until about a year ago, I had never eaten beet greens. One of the challenges I have faced in my journey to be green, healthy and fit is in the area of cooking. If you have read my posts before, you know about my aversion to cooking. I know that my son gets plenty of vitamins because he takes a fantastic supplement and I “hide” vegetables and fruits in just about everything (might have to do a post about that). But when it comes to eating fruits and vegetables in their natural state, it’s all about the “dip”.

I had a meeting that provided childcare and snacks were going to be served. I knew the snacks would not be gluten free and certainly not non GM.
