It has gone long enough.  At first I thought it was cute my girl wanted to sit nicely in my lap and scroll through baby pictures on my phone.  I was in heaven. Soon every time I made a call she had too look at pictures while I talked, then on the computer, too.  She would sit at the computer desk and scream for babies.  She is a woman obsessed.  Well a baby obsessed with babies.  I will be gathering all of her close friends and family with letters of support, and we will let her know how her baby addiction is running our lives.  Ohh how I miss when I could make a call with out someone screaming "BABIES!!" in the background. Lets hope she agrees to treatment...not sure what that would be yet.


First thing in the morning jonesing for some babies

Ok enough of my dramatics lets talk my addiction, sweets!! And I know just the way to cure it.  Muffins with vegetables.  I"m pretty sure sugar cancels itself out if paired with vegetables. So I had a perfect zucchini fresh picked from my garden, and I wanted to make something sweet, but not the run of the mill muffin.  Then I found it (on Pintrest of course) Lemon zucchini muffins.  I found it here, but tweaked the recipe so I could use the ingredients I had, and make them a little healthier! Your welcome.

Lemon Zucchini Muffins

2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup sugar
2 eggs
1 8 oz container plain Greek yogurt
1 small zucchini
zest or 1 lemon
juice of 1/2 lemon
1/3 cup canola oil

Preheat oven to 350 degrees.  Grease (or use paper liners if you're fancy and have them in your house) a muffin tin.  This recipe makes about 12 muffins.

Grate zucchini.  In a large bowl mix together sugar, eggs, yogurt, grated zucchini, lemon juice and zest, and oil.  In a separate bowl mix together dry ingredients.  Add the dry ingredients to wet.  Mix until just combined.  Scoop about 1/3 cup batter for each muffin.  Bake 15-18 minutes until a toothpick comes out clean (or in my case a giant wooden skewer..I work with what I have).
