This isn't your typical throw together in five minutes kind of meal I made in Cooking Light last month, so beware and be ready. In fact, as I was carrying the plates to the table, I told Hubby that I wasn't sure it was worth all the time and effort. As he peered over my shoulder into the mess in the kitchen, he probably agreed.
You will need several pans and bowls to put this together. In one saucepan you'll be making the rice. In a skillet, heating the vegetables. At some point, the vegetables will get put into a bowl while so the skillet can be cleaned out and the burritos finished up in it. You'll also be using a bowl for the sour cream sauce and another for shredding the quesadilla cheese.
It's all easy to do, just a bunch of stuff to clean and lots of veggies to chop and slice. If you know that ahead of time, you're good to go. >Read more.
