Have you ever stared at the cupboard, wondering if something tasty will jump out at you? It never happens at my house. I stare and stare, but nothing ever really looks good. Chicken is a staple, but my kids complain that is all we ever eat. Here is a really simple, very tasty Mexican dish we love to make. Try it out and let me know how you liked it.
Enchiladas (Enough for a family of 6)
This is a very easy and really tasty meal. My children even enjoy it!! You will need just a few things...
A package of white corn tortillas
4 boneless chicken breasts
Start dinner by placing your chicken breast in a pot of water, add a pinch or two of salt and just a slice or two of onion to flavor the water. Allow the chicken to boil 20 min or so until cooked thru. Then shred the chicken and set to the side. (Reserve about a cup of the water from the cooked chicken for your salsa)
Saute some diced onion--2 TB or so in a skillet. Once the onions are softened...add your beans. Let them cook for 15-20 min on medium-low. Don't cook off all the juice.
Remove the paper covering from the tomatillos, rinse and add to a pan of water with as many jalepenos as your family likes. We normally add 2. Boil these until just soft.
Add the cooked tomatillos and jalepenos to the blender, add a cup of water reserved from your chicken. Add a heavy pinch of salt and the peeled garlic. Mix it up well!!
Get a skillet hot on the stove...in just a touch of oil, fry up about 3 medium slices of onion. Once hot--add your salsa. Allow to cook on low for about 15 min in the skillet. The salsa will be a little thick, not solid though.
Now you can get to the fun part!!
Heat about half and inch or little more of veg/corn oil in a saute pan. Once it is hot enough to make the tortillas sizzle immediately upon contact...... add a tortilla, let it puff, then flip it over....puff and take it out. The point of this step is to cook and seal the tortilla, so the salsa doesn't make it mush. We have skipped this step before and it really does change the dish.
After you have your tortillas ready--QUICKLY bathe the tortillas in the salsa. Don't soak them too long, but you certainly want that delicious sauce to stick.
Next you will add a spoonful of beans down the middle of each tortilla, then a layer of shredded chicken.
Now, roll them up.
Top with all your favorites....Tomatoes, Lettuce, Sour Cream, Cotija (a Mexican Parmesan), Avacado.
