Quick and Easy Complete One-Skillet Meals that Make Clean-Up a Breeze

Skillet-Roasted Potato and Reuben Melt

This meal is great for lunch and dinner, and is extremely hearty.

Ingredients:

  • 1 pound sweet potatoes peeled and cut in wedges
  • 1 pound potatoes cut into thin wedges
  • Extra virgin olive oil
  • Salt and pepper
  • Freshly grated nutmeg
  • 1 teaspoon caraway seeds
  • 1 pound sauerkraut
  • 1/2 cup ketchup
  • 3/4 cup sour cream
  • 1/4 pickle relish
  • 1 1/2 pounds of thick sliced corned beef, chopped up
  • 2 cups shredded Gruyere or Emmental cheese

Directions:

Preheat the oven to 400F. Next preheat a large skillet over medium high heat. Coat the potatoes with olive oil in a bowl, then season with caraway seeds, nutmeg, salt, and pepper. Add the potato mixture to the hot skillet and toss. Place in the oven for 20-25 minutes.

Rinse and drain the sauerkraut. Next combine the relish, sour cream, and ketchup in a bowl. Season with salt and pepper. Take potatoes from oven top with sauerkraut, sauce, chopped corned beef, and cheese. Place back in over for 10 minutes, remove and enjoy.

Skillet Deep Dish Pizza

Create an artisan pizza in the comfort of your own home.

Ingredients:

  • 1 pound fresh pizza dough at room temperature
  • 4 tablespoons extra virgin olive oil
  • 10 ounces mozzarella, thinly sliced
  • 1 pound hot or spicy Italian sausage sliced into rounds
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup marinara sauce
  • 1/2 cup grated parmesan
  • 1 tablespoon dried oregano

Directions:

Preheat oven to 400F degrees. Next heat a skillet over medium-high heat, and add olive oil. Brown the sausage rounds. Grease the inside of the skillet with the butter, and place the pizza dough in the centre. Gently spread it out by pulling on it. Spread the sausage on the dough, then the mozzarella, and marinara last. Next sprinkle the garlic on top and then the oregano. Sprinkle the parmesan on top and drizzle with 2 tablespoons olive oil.

Place the skillet in the oven on the bottom rack and cook for about 30 minutes. Allow to cool for five minutes before you slice the pizza.
